Maize porridge with buckthorn

In Denmark we have buckthorn on many of our beaches and many people love to pick their own.
If you don’t have buckthorn growing near you, make sure to buy organic buckthorn powder.

Maize porridge with buckthorn

Ingredients

  • 0,5 dl maize flour (25 g)
  • 1,5 dl cold water
  • 1 tsp. fat, e.g rapeseed oil
  • 0,2 dl breastmilk or formula
  • A pinch of buckthorn powder

Instructions

1. Heat flour and water over medium heat in a small pot and add the buckthorns. Stir until the porridge becomes tender and sticks to the spoon. Take the pot off the heat and add fat and milk. Served chilled. Leftovers should be discarded.
