These pancakes made from porridge leftovers have the name “klatkager” in Danish and are very popular and easy to make. You can use any kind of porridge leftovers.


  • Leftovers from a porridge or rice pudding
  • 2 egg yolks
  • 2 whipped egg whites
  • Vanilla grains or 1 tsp. vanilla powder
  • Butter or coconut oil


Stir the porridge/pudding with the egg yolk, sugar, vanilla, and cinnamon.

Carefully add and flip the whipped egg whites, one by one. If the dough is too soft, add some oats to it.

Heat a pan with butter/oil and add the dough with a tablespoon and cook over medium heat.

The pancakes are ready when they have obtained a golden color and should be enjoyed right away.

Add syrup or fruit puree as a topping.

However, they can also be included in the lunch box.
