This delicious veggie puree awakens Christmas and Holiday memories.
- 2 medium parsnips
- 1 pear
- 3 dried figs
- 1 tsp. grated peel from an organic orange
- 2 tbsp. maple syrup
Peel the parsnips and dice them into small dices. Core the pear and cut it into pieces.
Place parsnips, pears and figs in a small saucepan together with 125 ml. water.
Boil the ingredients and let them simmer for about 20 minutes until the parsnips are tender.
Turn off the heat and blend the mix (including the water) in a blender.
Add the orange peel and maple syrup and blend until the mix has the wanted consistency. Served lukewarm.
